Avocado Cacao Mint Smoothie

½ Fresh Avocado
1 Frozen Banana
2-3 Drops Peppermint Oil/ Extract
1.5 Tbsp. Maple Syrup (optional, for added sweetness)
1 Tbsp. Harvest Bay Coconut Oil
2 Handfuls Fresh Spinach
1 Cup Milk or Non-Dairy Milk
2 Tbsp. Cacao Nibs or Dark Chocolate Chips


Chocolate Syrup
Coconut Whipped Cream
Cacao Nibs


In a high speed blender, combine avocado, banana, spinach, peppermint oil, maple syrup, coconut oil, and liquid. Blend for about 1 minute, or until the consistency is smooth and velvety. Add in cacao nibs/chocolate chips and blend on low, just until roughly chopped. Swirl chocolate syrup along the side of a glass before pouring the smoothie in. Top with coconut whipped cream and sprinkle cacao nibs on top.
